Stuffed Zuccini and Squash

This is a healthy dish filled with nutrients and vitamins. Its a beautiful dish that looks amazing and tastes even better.

Stuffed Zuccini and Squash

  • Servings: 1 zuccini or squash
  • Yield: 4
  • Prep Time: 20 min
  • Cooking Time: 40 min

Ingredients

  • 1 cup brown rice
  • 93% lean ground beef
  • 4 zuccinis
  • 4 squashes
  • 2 garlic cloves, minced
  • 1 onion, minced
  • 1 cup tomato, chopped
  • 1 can, 6 oz, tomato paste
  • 2 Tbsp. parsley
  • pinch salt and pepper
  • ⅛ cup water
  • 1 Tbsp. olive oil
  • ¼ cup parmesan cheese, shredded

Preparation

  1. In a bowl add beef, rice, ½ can tomato paste, ⅛ water, olive oil, tomato, salt, garlic , onion and pepper
  2. Cut zucchini and squash in half along the width and with a tsp. start taking the insides out
  3. Stuff the zucchini and squash with the rice and beef mixture
  4. In a large pot place the stuffed zucchini squash and remaining tomato paste
  5. Add water to the pot until it covers the zucchini and squash, cook for about 40 to 50 minutes
  6. Garnish with the 2 Tbsp. of cheese
