4 Easy (and Freezable) Breakfast Hacks

Breakfast has to be the the most challenging meal of the day over at my house. No one can ever agree on what they want to eat. There have been mornings when some of my kids are clamoring for a hot meal while I can barely get the others to eat a handful of dry cereal.

The high school bus arrives at 6:45 AM. Then, there are three more buses at my door until the elementary bus leaves at 8:45. I used to go to bed each night with the intention to wake up extra early to prepare an elaborate spread for the kids before they left for school. Instead, most days I wound up hitting snooze too many times resulting in very stressful mornings dragging kids out of bed and throwing toaster pastries at them as they ran to catch the bus.

Epic mom fail!

I decided to incorporate breakfast into my weekly meal prep. I usually pick one day a week for planning, shopping, and preparing the bulk of my meals. In order to regain control over the morning rush, I needed to find easy and preferably, freezable options for breakfast.

Breakfast Parfait Popsicles

Yogurt has always been something all my kids can agree on. This summer, I started freezing yogurt tubes and handing them out as the kids headed out the door to play. This one handed breakfast is cold, sweet, and nutritious, but I still felt like there was something missing. With a few popsicle molds and a few of my favorite yogurt mix-ins, I came up with a delicious breakfast treat.

These are super simple to make. Feel free to experiment with your favorite fruit and granola options. Just pop a batch or two in the freezer, and enjoy these pops all week long.

Cherry Oat Breakfast Cookies

With no added sugar these “cookies” are wholesome and healthy, and my kids can’t wait to eat them up. I often will whip up a double batch at a time and freeze the extras to enjoy all week long. My son doesn’t like dried fruit, so I make a few plain ones for him. I also like to surprise the kids with the addition of dark chocolate chips, which is delicious, especially with dried cherries.

Easy Breakfast Frittatas

With many mouths to feed, it is extremely convenient to use a muffin tin to make multiple flavor combinations at a time. These frittatas can be prepared in advance and frozen until you are ready to enjoy them. Just pop them in the microwave and you can enjoy eggs on the run.

Muffins

Muffins are an easy breakfast option. Made the night before or fresh out of the oven, muffins are best served warm. I will make a few extra batches so I can freeze a dozen (or more.) In the morning, pop a few out of the freezer, wrap them in a paper towel, and heat in the microwave until warmed.
