When the temperature falls and the kids start climbing the walls visit somewhere warm and sunny without leaving your own home! Take a trip around the world with a selection of foods from around the world (and if you have the ingredients for a margarita on hand, all the better!).

Makes 4 servings

Needed Equipment: 2 saucepans with lids
STARTING PREPARATION:
-Thaw chicken thighs (in the fridge overnight, in a sink of cold water for a couple of hours, or in the microwave).
Chicken Curry:
- 2 Tbsp olive oil
- 4 tsp minced garlic
- 2 Tbsp lemon juice
- 1/2 Tbsp curry powder
- 1 Tbsp dried minced onion
- 1 1/3 lb bone-in chicken thighs
- 8 Tbsp tomato sauce
- 1 cup water
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp basil
- 1 bay leaf
- 1 baking apple, diced
- Heat oil over medium heat (don't get it too hot or your garlic might burn). Add garlic and cook until browned. While that is cooking, combine vinegar or lemon juice and curry powder in a small bowl. Add to the pot with the onion and cook for another 1-2 minutes (this releases the flavor of the curry powder, plus it smells fantastic!).
- Add in the chicken thighs and mix to coat. Then add remaining ingredients except potato and bring to a boil. While that is cooking, cut up the apple – add them in all at once as soon as you are done. Reduce heat to medium-low (you want to simmer, not really boil), cover, and cook for about 20-30 minutes until the chicken has reached an internal temperature of 165F and the potatoes are cooked.
